Discover the Heart of Moroccan Cuisine:Harira 



If you’re looking for a dish that encapsulates the rich flavors, warm hospitality, and culinary heritage of Morocco, look no further than Harira.Welcome to the vibrant world of Moroccan cuisine!

 Ingredients:


- 1 small cup of lentils
- 2 cups of peeled chickpeas
- 5 tablespoons of coriander, parsley, and celery
- Beef bones for flavor
- Pieces of beef
- 1 small chopped onion
- 1 tablespoon of vegetable oil
- ½ teaspoon of turmeric
- 1 teaspoon of paprika
- 1 teaspoon of ginger
- 1 teaspoon of salt
- 2 liters of water
- 5 tomatoes
- 1 tablespoon of tomato paste (optional; you can skip this)
- A small cup of vermicelli (preferably of the thin type)
- 2 sticks of cinnamon
- 1 teaspoon of hot ghee (clarified butter)

-flour with water


 Steps:

1. In a pressure cooker, place the chickpeas, lentils, and onions. For the tomatoes, leave them with their skins on, and wash the carrot and cut it without dividing it. 
2. Add the celery, coriander, and parsley, then the oil and all the spices mentioned above, along with the ghee. 
3. Next, add the bones and meat, stirring well over low heat. 
4. Add boiling water and close the pressure cooker tightly for half an hour until everything is cooked.
5. When everything is cooking, remove the tomato, and blend it to incorporate it into the harira. 
6. Then add the tomato paste and mix well. After that, add the vermicelli with flour with water  and stir for five minutes until you achieve the desired consistency.
7. Finally, add a tablespoon of celery for flavor, mix well, and serve hot with dates and boiled eggs.
